Zucchini Bread
This past Friday at D.R.E.A.M. Wellness, I blessed the office with some homemade zucchini bread….but no ordinary zucchini bread. This bread was wheat-free, gluten-free, as organic as you can get and chock full of nutrition. The best part was that the zucchini used was from one of our very own member’s garden. Those of you who were lucky enough to come in on Friday asked for the recipe, so here it is:
2 cups shredded raw organic zucchini, drained
3 cage-free organic eggs
1 1/4 cups organic cane sugar or organic blue agave nectar
1 cup organic coconut oil
2 cups wheat and gluten-free flour
1/4 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup organic chopped walnuts
1/2 cup organic raisins, dried cherries, or dried cranberries
3 cage-free organic eggs
1 1/4 cups organic cane sugar or organic blue agave nectar
1 cup organic coconut oil
2 cups wheat and gluten-free flour
1/4 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup organic chopped walnuts
1/2 cup organic raisins, dried cherries, or dried cranberries
Preheat your oven to 350 degrees
Mix oil, sugar and eggs in a bowl
Add flour, baking power, baking soda, salt, cinnamon and vanilla
Stir in walnuts and dried fruit
Mix in shredded zucchini
Pour evenly into 2 greased and floured loaf pans
Bake for 1 hour, let cool before slicing.
